Plain and Simple Self-Rising muffins

3 cups King Arthur Unbleached Self-Rising Flour
2 tablespoons sugar
2 tablespoons vegetable oil or melted butter
12-ounce bottle or can beer; or 1 1/2 cups club soda or seltzer water

1) Preheat the oven to 375°F. Lightly grease or spray with non-stick cooking spray a 12-cup muffin pan. Or line the pan with papers, and spray the papers.

2) Combine all the ingredients, mixing quickly just until all the flour is moistened.

3) Fill the muffin cups about 3/4 full, and bake until muffins spring back when pressed lightly in the middle, about 14 to 18 minutes; the tops will stay pale. These are best enjoyed warm from the oven.

4) Remove from the oven, and serve warm.

Yield: 12 muffins.
